IHM1302 Bar Operations and Wine Knowledge (1/2024)
The
course offers a hands-on, practical approach on all aspects of the operation of
a bar, with a clear focus on comprehensive beverage product knowledge and
specialized beverage preparation. It provides students with knowledge of bar
equipment and tools, bar set-up, bar sanitation, as well as varied ingredients,
production processes and categories of beverages. The basic practical will be
given to the methods for making standard mocktails and cocktails. The par stock
control and calculating of standard cost recipe. It provides the ability for
student to develop and integrate the bar operation learning through a
combination of beverage knowledge and work-related activities with its
practical application in the workplace and be able to develop professional
competencies such as decision-making skills, problem solving skills and handle
with real customer. This course also includes essential information on a wide range of beverage
products as well as the correct way of serving them.
